Centered in a full loaf of focaccia bread, this four cheese blend layered with the spicy tang of dijon and heat of jalapenos will have your mouth watering for the next bite. This recipe is fun when you are looking for a good, old fashioned, mouthful of melty, gooey, deliciousness, and don’t want to spend a long night in the kitchen.

Coming together in less than 30 minutes, this is a quick meal that will satisfy the whole table.

Ingredients for Monster Focaccia Grilled Cheese

First off, hit the bakery and get yourself a nice loaf of Focaccia bread. Focaccia bread is a wonderful bread with a slightly thicker consistency, similar to a pizza dough, that is perfect for hearty sandwiches. It also tends to come in a variety of flavors so you can pick and choose some of your favorites.

For this particular sandwich, you’ll want to find a nice big, flat loaf. The diameter of the one we use is about 7-8 inches round and about 3 inches thick. This allows you to slice the bread in half and load up the inside. Focaccia often comes in rectangular loaves as well, so you can definitely get one of those, also.

In the cheese section you will need to pick up some Cheddar, Mozzarella, Jalapeno Jack, and American. This particular blends gives a nice mix of flavor with the sharpness of the Cheddar set of nicely with spicy bit of Jalapeno Jack, while the Mozzarella and American mellow the taste out and make for a fantastic melty middle. You can buy these pre-shredded or get blocks and shred them yourself.

The spread on this is a mixture of mayo and dijon mustard. We like the olive oil based mayo, but whatever your preference is will work.

Finally, we load this particular monster up with some sliced avocado, tomatoes, jalapenos and onions to give it a really nice kick. Yep, this truly is a monster focaccia grilled cheese with all of that happening in the middle. Let’s get cooking!

Putting Together your Grilled Cheese

The first thing you’ll want to do is get your ingredients prepped. Grate the Mozzarella, Cheddar, and Jalapeno Jack cheeses. American is a soft cheese, so you can cut this into thin strips to layer onto the sandwich.

Julien slice the onion into small slices that you will be able to layer onto the sandwich. Cut the jalapenos, avocado, and tomato into thin, sandwich style slices as well.

Mix your dijon mustard and mayo together evenly for a spread.

Now you’ll slice your bread. Slice the Focaccia Bread into equal top and bottom slices, to make sure that each side of the bread is fairly equal.

Warm your oven or Air Fryer to 375 degrees.

Spread the dijon/mayo mix evenly onto the inside of both the upper and lower section of the bread.

Layer half of the cheeses onto the bottom half of the bread. Evenly spread out the jalapenos onion slices, avocados, and tomatoes on top of this layer of cheese. Spread the rest of the cheese on top of the vegetables, then put the top slice of bread on the sandwich.

Placing the vegetables in between the cheeses allows for the bread and vegetables to have something to melt to and holds the sandwich together.

This is a big sandwich and will vary a little based on the thickness of your bread when you cook. You’ll bake on the middle rack of your oven or in a counter top grill for about 4-8 minutes. What you’re going for is the center cheese getting nice and melted while not burning the bread.

Pull out of the oven and cut into four quarters, then serve this Monster Focaccia Grilled Cheese up for a great lunch, dinner, or snack!

  1. Preheat the air fryer to grill/bake at 375°

  2. In a small bowl, combine the mayo and Dijon mustard and whisk until smooth.

  3. Cut the loaf horizontally to create a top and a bottom and spread the mayo mix generously over the top and bottom halves.

  4. Layer the toppings alternating between the cheese, the onion, and avocados and tomato. You want the cheese to melt into place and hold together.

  5. Place in the air fryer and cook for 4 to 6 minutes, or until the cheese has melted.

  6. Remove and cut into the appropriate amount of slices and enjoy with your favorite side!
