Jalapeño Popper Stuffed Chicken
Why just delegate jalapeno poppers to the appetizer tray when you can bring the creamy, delicious, spicy kick of this favorite to the dinner table? This simple and quick cheese and pepper blend stuffed chicken breast will have you reaching for your water glass (or margarita) and have you asking for more at the same time.
Preheat oven to 400 degrees.
Make 5 slits in each breast, being careful not to cut through completely. Transfer to a lightly oiled baking sheet and season all over with salt and pepper.
In a medium bowl, stir together cream cheese, mozzarella, cheddar, pepperjack and garlic. Season with salt and pepper.
Stuff each chicken breast with bacon, sliced jalapeños, and cream cheese mixture.
Bake until bacon is crisp and chicken is cooked through and no longer pink, about 25 minutes.
