Anyone who knows me knows the Po’ Boy is hands down one of my favorite dishes. It doesn’t matter the occasion or night of the week – if I come home and see the tilapia thawing alongside some cajun spice and cabbage, I am one happy woman.
Crunchy, spicy, with a little kick of tangy sweetness from the sauce and cabbage… how do you ever get enough of this? So when Dre said he was going to play around with the Po’ Boy to try the flavors out in a different way, I was both worried and thrilled at the same time. I mean, on the one hand, why mess with perfection, which is what the sandwich is. But then on the other hand, why limit something this magnificent to one dish? And of course, it’s Dre messing with the flavors, so pretty sure things are going to go well.
And go well they did. Dre’s spin on the Po’ Boy infuses two classic southern favorites into one mouth watering bowl. Layering the fish onto a hearty bowl of red beans and rice keeps both of these dishes fresh and flavorful. While it will fill you up, it won’t weigh you down, so if you’re looking for a twist to add to your dinner table, dive in!

This Po’ Boy Rice Bowl Will Heat Up Your Kitchen With Some Southern Fusion

A twist on two favorites, the Po' Boy Rice Bowl brings together the spiciness of breaded tilapia with the heartiness of red beans and rice.
Ingredients
Fish
Rice Bowl Mixture
Sriracha Sauce
Instructions

Sriracha Sauce
In a small bowl, whisk together the mayo, lemon juice, sriracha, and mustard
Set aside

Fish
Pre-heat your air fryer to 390 degrees
In a mixing bag/bowl combine cornmeal, flour, Panko, old bay and cajun spice.
Set aside.
In a bowl, beat egg and mix in milk.
Place tilapia pieces into the mix and coat well. Drain excess liquid from bowl.
Place the tilapia pieces in the breading mixture and shake until thoroughly coated with breading.
Just before putting into air fryer, spray with vegetable oil.
*Put fish into air fryer and cook for 10 minutes. Turn fish halfway through
*Once tilapia is breaded put it to the side and start your rice. To serve everything hot together, cook the tilapia after your rice has been cooking for about 10 minutes. -
Rice Mixture
In a medium saucepan on high heat, add rice and 2 cups of water and bring to a boil.
Reduce heat to low, cover and cook for 20 minutes.
Fluff and put into a large bowl.
Add cabbage, tomato, beans, and 1/3 cup of the sriracha sauce. Mix well.

Bowl Assembly
Scoop the rice mix into a serving bowl.
Top with tilapia pieces.
Drizzle with the remaining sriracha sauce.
