Shrimp Fried Rice
Heat olive oil in a large skillet/wok over medium-hi heat. Season shrimp with salt/pepper and saute 2-3 min per side. Remove and set aside.
Add eggs to the pan, and scramble until fluffy. Set aside
Add onions and carrots to the pan with 1 tbsp sesame oil and cook 2-3 minutes until they begin to soften. Add garlic and cook for 45 seconds.
Add peas, corn, rice, shrimp, and eggs. Stir in remaining sesame oil and soy sauce. Mix/fry until heated all the way through.
Mix in/top with green onions and serve!
- Leftover rice works best, or cook and cool before using.
- You can change the veggies. Snap peas, broccoli, asparagus, bell peppers etc… just saute with onions and/or carrots.
- You can add/substitute pork, beef, chicken, tofu etc…prepare just like the shrimp.
