This member of the stuffed chicken selection is the sophisticated one of the group. Hitting your tastebuds with the tang of gorgonzola cheese, the spinach keeps the mixture light. Classically flavored with traditional spices, the thinly pounded chicken breast maintains a simple flavor, letting the stuffing be the star of the show.

Deceptively simple to make, this dish is the classic simple black dress or suit you pull out of the closet when it’s time to impress, or just feel like dressing up the dinner table for the night.

  1. Preheat oven to 400 degrees.
  2. Use a meat tenderizer to pound out the chicken breasts until about 1/4-inch thick, or if you are using thicker cut chicken breasts, butterfly them open.
  3. Rub chicken breasts with olive oil and season with salt, pepper and rub garlic into the pocket. Place a layer of spinach in the middle. Finish off with a large pinch of cheese.
  4. Carefully fold the chicken so stuffing is completely inside. Secure the chicken with toothpicks. Place in a lightly greased baking dish. Bake in the preheated oven until chicken is cooked through, to an internal temperature of 165 degrees, about 25 minutes.
  5. Remove toothpicks before serving. You can serve the chicken whole, or slice in half, or in 1-inch slices.

Note

  • Mushrooms would be a great addition.
  • You can wrap the chicken in bacon..I don't recommend thick cut.
