What am I going to Need For This Particular Strawberry Goat Cheese Grilled Cheese?
OK, this list is short, but fewer ingredients doesn’t mean less flavor, just less work!
First off, goat cheese. A few fun facts about goat cheese – healthier than cow cheese, goat cheese is more easily digestible than cow cheese and is rich in riboflavin and selenium. Get a nice log of goat cheese that you’re going to be able to spread.
Next, you’ll need strawberries. Fresh strawberries are always the best strawberries, so yes, this makes this sandwich one of our favorite summer dishes. However, strawberries have become much easier to find a little more on the shoulder seasons, so you should be able to kick this nicely into spring and fall. While you’re in the produce section, grab yourself some fresh mint sprigs.
For the spread on this we love a blend of berry and habanero jelly. That little bit of habanero jelly gives just a little bit of heat, while the berry flavor makes sure to keep the balance of sweet.
Finally, your bread. You do need a good sliced sandwich bread that is going to hold up to both your filling and the grilling process. This is so nice with a good fruit flavored sandwich bread. It tastes fantastic with a cranberry bread, or even an apricot, and we also love it with a nice sunflower seed bread. The taste is really up to your choice and what the bakery might be serving up today, so find a fun bread, and let’s get grilling!
Putting Together Your Grilled Cheese
OK! We have our ingredients, let’s get ourselves going!
First things first, warm your air fryer to 400 degrees and put on the grill setting if possible. We are huge fans of the Ninja Foodie 5 in 1 Countertop Grill. It’s perfect for grilling sandwiches like this, and we use it regularly. If you do not have an air fryer, don’t fret. You can lightly oil a skillet and cook it in a skillet, or you can press it with a panini presser.
Now, lightly spread olive oil on what will be the outside of your slices of bread.
Once your bread is lightly oiled, spread your goat cheese on the inside slices of bread for both the top and bottom piece of bread for the sandwich. Spread the jelly mixture over the goat cheese on both slices of bread.
On what will be your bottom slice of the sandwich, layer the strawberry slices. Add mint leaves on top of the strawberry slices.
Place the top piece of bread, goat cheese and jelly facing in, on top of the bottom layer of the sandwich to assemble.
Place the sandwich inside the air fryer and grill for two to three minutes, lightly browning one side. Flip the sandwich over and grill for another two to three minutes.

Preheat your air fryer to 400° and use the grill setting if possible.
If you do not have an air fryer, you can pan fry in a lightly oiled skillet or press in a panini press. -
Mix the habanero jelly and the berry jelly together. Lightly brush the outside of your bread slices with olive oil.

Spread the goat cheese on one side of all slices of bread. Spread the jelly mixture on top of the goat cheese.

Layer the sliced strawberries onto what will be the bottom half of the sandwich. Place mint leaves on top of the strawberries.

Assemble as a sandwich

Place the sandwiches in the air fryer and cook 2 to 3 minutes per side, or until the cheese has slightly melted and the bread is slightly browned.

Remove from heat, cut in half and enjoy with your favorite side!
